Smith's Production of Hot Dogs Underway

APRIL 1, 2014- Nothing says Erie like a Smith's hot dog.
Production is ramping up for one of the busiest times of the year for the local family owned corporation.
And with the seasons changing and Erieites busting out their golf gear and baseball equipment, Smith's is beginning production of dogs.
Our cameras got an inside peek at what goes into manufacturing Erie's number one choice from start to finish.
Production starts with fresh meats that are blended with a secret seasoning...  That seasoning was developed by corporation president Mike Weber's grandfather, Tony.
From there, the meat is finely ground into an emission product which then gets stuffed into casings.
Once the product is smoked and cooked, then the temporary skin or casing is removed.
Mike Weber says his family owned and operated company has garnered attention across the country and being the official provider to the Consol Energy Center in Pittsburgh and Erie's primary hot dog provider means a lot.
Weber says it takes a small army of employees to get the job done, and he takes pride in their work...
Smith Provision produces 14 million links a year.
That's roughly 55 thousand links per day.
