APPLE DUMPLINGS

Ingredients:

Pastry for pie (see below)

4-6 medium sized tart apples (use firm apples like Granny Smith, Crispin, Northern Spy)

Cinnamon/sugar blend (1/2 cup sugar + 1 teaspoons cinnamon)

cup sugar

2 cups water

3 Tablespoons flour

3 Tablespoons butter or margarine

teaspoon cinnamon

 

Directions:

   Preheat oven to 350 degrees

   Roll out pastry and cut into 6-8 inch squares, then cut each square into 2 triangles so you will get 2 dumplings out of each square of pastry.  The pastry recipe below should give you 6-8 triangles for your dumplings.

   Peel and core the apples and slice into thin slices

   Fill each pastry triangle with apples (about cup apples per pastry)

   Sprinkle with cinnamon/sugar blend

   Bring all ends of the triangle to the center of the apples and lay seam side down into baking dish.

   In a saucepan, bring the following to a boil:

o       cups sugar

o       2 cups water

o       3 Tablespoons flour

o       3 Tablespoons butter or margarine

o       teaspoon cinnamon

   Boil for 3 minutes or until mixture begins to thicken

   Pour mixture over the dumplings

   Cover with foil and bake at 350 degrees for 45 minutes

   Remove foil and bake an additional 15 minutes
