1 Tablespoon butter or margarine
1 medium onion, diced
1 large carrot, shredded or diced
1 stalk celery, diced
3 ears of sweet corn, kernels removed from the cobs
3 ½ cups low fat milk
1 medium potato, diced
¼ cup red pepper, diced
Salt, pepper, thyme to season
·In a large saucepan, melt the butter over medium heat and sauté the onions for 5 minutes, until soft.
·Add the carrots and celery and cook for another 5 minutes.
·Add the milk and bring to a boil.
·Reduce heat and simmer, covered for 30 minutes, being careful not to scald the milk on the bottom of the pan.
·Add the potatoes, corn, red pepper and spices and continue to cook on low until potatoes are soft.
