Pumpkin and pesto chicken in puff pastry

4 boneless skinless chicken breasts
Salt / pepper
1 small baking pumpkin, peeled and cut into ¼ inch slices+
½ cup Baby spinach leaves
¼ cup ricotta cheese
¼ cup pesto
4 puff pastry sheets


·Preheat oven to 400 degrees F.
·Season the chicken breasts with salt and pepper and brown on stove top, turning to brown both sides.
·Remove from pan and set aside.
·Spread puff pastry sheets on worktable.
·Place some spinach in the center of each pastry sheet.
·Place 1 chicken breast on top of the spinach.
·Top chicken with remaining spinach leaves.
·Place sliced pumpkin on each chicken breast.
·Top with 1 Tablespoon ricotta cheese and pesto.
·Wrap pastry sheet around the chicken and secure edges.
·Place on baking sheet or casserole dish and bake 30-45 minutes or until pastry is golden brown and internal temp of chicken is 165 degrees F.
