Savannah Smiles... Frozen Lemonade Tarts
1st place winner of the 2012 Girl Scouts of Western Washington cookie recipe contest. Thinking out of the cookie box with some delicious ideas!
1 packages (9oz) Savannah Smiles Girl Scout Cookies
1 stick butter or margarine (1/2 cup)
Dash of salt
cup heavy cream
3 egg yolks
Juice and rind of 2 lemons
cup softened butter
1 6 oz vanilla yogurt
21 Savannah Smiles cookies
For the crust:
Crumble the Savannah Smiles with a rolling pin or in a food processor.
Melt the butter and drizzle over the crushed cookies
Mix until well blended
Press about 2 Tablespoons of the crust mixture into mini tart pans lined with mini paper liners and bake in preheated oven at 350 degrees F for about 8-9 minutes.
Set aside to cool.
For the filling:
Place sugar, cornstarch and salt in medium saucepan and mix.
Measure cream, milk and eggs in a bowl and whisk into the sugar mixture on medium heat to blend
Add juice of the lemons to the cream mixture and the softened butter. You can also add some of the lemon rind to the mixture if you'd like.
Continue to whisk until mixture boils. Remove from heat.
Mixture will thicken as it cools. Set aside and allow to cool. Then whisk in yogurt until blended.
Fill each tart and freeze for about 1 hours. Remove tarts from freezer, top with whipped topping and garnish with another Savannah Smile!
