BLUEBERRY CREAM CHEESE FRENCH TOAST BAKE

Ingredients:

1 cup blueberries

1 Tablespoon flour

6 slices bread, any type

teaspoon cinnamon

4 oz cream cheese, low fat

1 cup low fat milk

4 eggs

1 Tablespoon lemon juice

cup maple syrup

cup melted butter or margarin

Directions:

 Preheat oven to 350 degrees

 Spray a 9x9 inch baking dish with non stick spray

 In a mixing bowl, lightly toss the blueberries with the flour to coat

 Tear or cut 3 slices of bread into bit size pieces and place on bottom of pan

 Cut the cream cheese into small pieces and scatter on top of the bread cubes

 Layer with coated blueberries

 Tear 3 more slices of bread and cover the blueberries

 Sprinkle teaspoon cinnamon over top of the bread

 In a large mixing bowl, combine the following:

o  1 cup milk

o  4 eggs

o  1 Tablespoon lemon juice

o   cup maple syrup

o   cup melted butter or margarine

 Pour egg mixture over the bread, pressing the bread down with a spatula to allow bread to soak up the egg mixture.

 Bake at 350 degrees uncovered for 40-50 minutes or until center is firm and no longer liquid

 Top with powdered sugar, syrup, or blueberry sauce (below)

BLUEBERRY SAUCE:

 In a saucepan, combine the following:

 1/3 cup water

 1/3 cup sugar

 2 teaspoons cornstarch

  cup blueberries

Bring to boil and stir for 2 minutes.  Reduce heat to low and simmer 5 minutes.
