Layered Picnic Salad

This salad is pretty enough for the table centerpiece but so tasty it will disappear in minutes! There are many variations you can make to suit your taste.

4-6 cups torn romaine lettuce or baby spinach
1 small red onion, sliced, separated into rings or green onions, diced
2-3 tomatoes, chopped or 1 cup cherry tomatoes cut into half
1-2 yellow pepper, diced
1-2 cups frozen peas, thawed
1-2 cups other vegetables such as diced celery, radishes, cucumbers, etc.
1 ½ cup shredded Mild Cheddar Cheese
1 cup Mayonnaise
2 cup low fat Sour Cream or fat free plain yogurt
¼ cup lemon juice
¼ cup chopped fresh basil
4 slices cooked bacon, crumbled


· LAYER lettuce, onions, tomatoes, peas, and any other vegetables in a CLEAR bowl.
· MIX mayo, sour cream or yogurt, lemon juice and basil; spread over salad.
· TOP with cheese and bacon.
· COVER with plastic wrap and refrigerate overnight or at least 5 hours.
