PUMPKIN SQUASH SWISS GRATIN

This creamy dish is a perfect complement to your main dish or can even be used as an entrée since it is so hearty.
INGREDIENTS:
3 cups sliced or cubed fresh pumpkin or squash
1 cup grated Swiss cheese
½ cup grated Parmesan cheese
1 teaspoon dried rosemary
1 teaspoon salt
½ teaspoon ground black pepper
1 cup cream or milk

DIRECTIONS:

·Preheat oven to 400 degrees F.
·Spray a 9 inch square baking dish with non stick spray
·Arrange 1 cup of pumpkin slices along the bottom of the dish.
·Combine the 2 cheese, and the spices in a medium bowl.  Sprinkle 1.3 of the mixture over the pumpkin slices
·Top with 1 cup cheese mixture.
·Add another layer of pumpkin slices and top with 1 cup cheese
·Add a third layer of pumpkin slices and top with the remainder of cheese
·Pour milk over entire dish
·Bake 40-45 minutes, until set and lightly browned on top.
·Serve warm.
